Prajitura cu morcovi, branza dulce si ghimbir

Este o prajitura delicioasa cu doua blaturi cu morcov ras si nuci, cu aroma de vanilie, scortisoara, nucsoara si ghimbir, lipite intre ele cu o crema din branza proaspata (sau crema de branza) si frisca.

Am pornit de la reteta americana "Carrot Cake".

 Ingrediente blat: 
200 g faina,
200 g zahar,
2 lingurite ghimbir macinat,
2 lingurite praf de copt,
1/4 lingurita scortisoara,
1/8 lingurita nucsoara,
1/2 lingurita sare,
3 oua mari,
125 ml ulei,
125 ml lapte,
1/2 pastaie vanilie (semintele),
 2 morcovi mari, rasi pe razatoarea mica,
 1/2 cana nuci prajite, rupte bucatele (10-12 nuci).
aprox. 100 g branza dulce facuta din lapte proaspat de vaca, stoarsa bine (sau puteti folosi 150 g crema de branza),
100 g unt moale,
2 lingurite ghimbir proaspat, ras, optional,
100 ml frisca lichida,
aprox. 250 g zahar pudra (sau mai putin, dupa gust),
1/2 pastaie vanilie (semintele),
 putina zeama de lamaie,
 un praf de sare.
 Mod de preparare blat:
  Se amesteca componentele uscate: faina, scortisoara, nucsoara, ghimbirul, praful de copt, sarea si zaharul. Separat se amesteca ouale, batute usor, cu uleiul, laptele si semintele de vanilie.
 Se combina cele doua compozitii si se adauga morcovul ras, apoi nucile prajite si rupte in bucatele.
 Se toarna compozitia in 2 tavi rotunde ( 21-22 cm diametrul) unse si tapetate cu faina. Se coc la foc potrivit, timp de 25 min, sau pana se rumenesc usor (se incearca cu scobitoarea). Se lasa sa se raceasca.
  Pentru crema, se freaca putin untul, se adauga semintele de vanilie si branza (bine stoarsa). Se adauga si zaharul pudra, dat prin sita, apoi frisca lichida si se bate cu mixerul la viteza mare. Se pune putina zeama de lamaie si un praf de sare.Se amesteca bine.
Se pune primul blat pe un platou, se pune o parte din crema de branza, apoi se pune al doilea blat si se imbraca cu restul de crema. Se pune la rece.
